Gulai Cancang khas Payakumbuh


Gulai Cancang (Khas Minang)





Bahan (ingredients) :

  1.  ½ Kg daging sapi (½ Kg of beef)
  2. 500 ml air (500 ml of water)
  3. 100 ml santan (100 ml coconut milk)
  4. Rebung yang sudah di rebus (beli secukupnya) (Boiled bamboo shoots (buy enough)
  5. Garam secukupnya (Salt to taste)
  6. Bumbu penyedap rasa secukupnya (Seasoning to taste)
  7. Minyak goreng (Cooking oil)

Bahan celup (Dyes) :

  1. 2 lembar daun kunyit ikat simpul (2 pieces of turmeric leaves, tie a knot)
  2. 2 batang sereh geprek (2 lemongrass stalks crushed)
  3. buah kapulaga (2 pieces of cardamom)
  4. 2 cm lengkuas geprek (2 cm galangal geprek)
  5. 4 lembar daun jeruk buang tulangnya (4 pieces of lime leaves discarding the bones)
  6. 1 buah bunga lawang (1 anise flower)
  7. 2 cm kayumanis (2 cm cinnamon)
  8. 1 buah asam kandis (1 sour kandis)

Bumbu Halus (ground spices) :

  1. 100 g cabe kriting (100 g of curly chilies)
  2. 10 buah cabe rawit (10 pieces of cayenne pepper)
  3. 10 buah bawang merah (10 red onions)
  4. 5 siung bawang putih (5 cloves of garlic)
  5. 1 ruas jari kunyit (1 knuckle turmeric)
  6. 1 ruas jari jahe (1 knuckle of ginger)
  7. 1 buah pala klu besar setengah aja (1 large nutmeg only half)
  8. 1 sdm ketumbar bubuk (1 tbsp ground coriander)

Cara Membuat:

  1. Panaskan minyak goring ,tumis bumbu halus hingga harum kemudian tambahkan sereh, daun jeruk, lengkuas, kapulaga, kayumanis, pekak, asam kandis, daun kunyit, tumis hingga bumbu matang
  2. Masukan daging dan aduk rata hingga berubah warna,lalu tuangi air, beri garam, dan bumbu penyedap tutup wajan dan biarkan hingga daging empuk
  3.  Setelah daging empuk tuang santan dan dan masukkan rebung yang sudah direbus, aduk terus agar santan tidak pecah,tunggu hingga mendidih,jangan lupa cicipi rasa dan jika rasa sudah pas angkat dan sajikan. 

How to make :

  1. Heat cooking oil, saute ground spices until fragrant then add lemongrass, lime leaves, galangal, cardamom, cinnamon, pekak, tamarind, turmeric leaves, saute until the spices are cooked.
  2. Put the meat and mix well until it changes color, then pour the water, add salt, and seasonings, cover the pan and leave it until the meat is tender.
  3. After the meat is tender, pour the coconut milk and add the boiled bamboo shoots, keep stirring so that the coconut milk doesn't break, wait for it to boil, don't forget to taste the taste and if the taste is just right, remove and serve.
